Triathlon Event I am participating with a group of friends in our first mini triathlon. We are gathering from all over the west and the only time we have to get together is the night before the event after the orientation. What do you suggest I serve for dinner? I’m thinking a chicken and rice cassarole, pasta salad w/veggies and chicken, green salad and bread. Any of this off limits?
Our crazy breast cancer survivor girlfriend talked all of us childhood friends (and our daughters) into doing this tri for the cure. Some of us haven’t seen each other for almost 30 years. We have now all reconnect and communicate via email about our training. Can’t wait to see everyone – will for sure keep you posted on how it goes Aug 2nd in Denver. Love your website, the best one I found.

In terms of your “night before” dinner, pasta is the traditional dinner of choice. It is full of carbs, which is then turned into energy for a great race. Sounds like that base is covered in your pasta salad. The rest of the dinner sounds healthy and delicious.
